2lbs Ground Beef
3 Purple or Orange Sweet Potatoes
2 cups Choice of Rice
15 oz can of Black or Pinto Beans
28 oz can of ROTEL Original Diced Tomatoes & Green Chilies
1 cup of Shredded Cheddar Cheese
2 Limes, juiced
4 cups of Filtered Water
2 tbsp Extra Virgin Olive Oil
2 tbsp Cilantro
1 tbsp Chili Powder
1 tbsp Italian Herbs
1/2 tbsp Ground Cumin
1/2 tbsp Smoked Paprika
1 tsp Garlic Powder
1 tsp Sea Salt
1 tsp Pepper
1. Bring the 2 tbsp Extra Virgin Olive Oil to medium heat in a large pan.
2. Add the 2lbs Ground Beef, Chili Powder, Italian Herbs, Ground Cumin, Smoked Paprika, Garlic Pepper, Salt, and Pepper. Cook until browned.
3. Add the 4 cups of Filtered Water and 2 cups of Rice to the pan.
4. Cube the 3 Sweet Potatoes. Add to the pan.
5. Add the undrained can of ROTEL, drained can of Black or Pinto Beans, Lime Juice, and Shredded Cheddar Cheese to the pan. Stir in the ingredients and let simmer for 10 mins. All of the water should be evaporated before serving.
6. Garnish with Cilantro.
